Very Berry Non-Dairy Smoothie

Fruit smoothies are perfect for hot summer days, and they do not have to incorporate dairy! Here’s my secret to making a smoothie that is creamy and delicious.

This recipe incorporates frozen and fresh fruits to create a frozen-yogurt-like texture and can be easily customized using many different types of fruits and different non-diary milks.

Ingredients:

1 cup frozen berry medley mixture. (I used this strawberry blueberry medley)

1 cup of fresh fruit, such as strawberries

½ cup extra creamy oat milk

Instructions:

You will need a blender that can handle ice. Ensure you have the right blender and blades before you attempt to blend together frozen fruits or ice cubes.

Pour frozen fruit into an appropriate blender.

Blend for 30 seconds

Pour in fresh fruit, and 1/2 cup of creamy oat milk (or other non-dairy milk of choice)

Blend together for at least 1 minute, and up to 2 minutes, until mixture is smooth.

Pour into glasses and serve immediately.

Alternative options:

This smoothie is great with the addition of any fresh berry, such as blackberries, blueberries, strawberries, or raspberries.

There are many plant-based milks you can use, including coconut milk, almond milk, soy milk, rice milk and others. Some are much easier to buy depending on where you live. My most important suggestion is to choose a non-dairy milk that is creamier and/or flavored, and avoid thinner milks, such as rice milk.

Or try adding a few scoops of your favorite non-dairy yogurt, such as coconut yogurt to make it even creamier.

Notes on Freezing:

In general, while it’s easy to double, I recommend making just the amount you want to drink rather than a larger mount.

You can try to freeze leftovers, but it becomes watery when you thaw it out. The only thing I have found that works for saving leftovers is using an insulated travel/coffee mug and putting a lid on it as it keeps it from becoming too watery. If you have a lot leftovers from the refrigerator and it becomes watery, you can re-blend it in the blender later to make it smooth again.

Alternatively, you can pour leftovers into popsicle molds to create frozen fruit popsicles!
