Peanut Butter Chocolate Chip Cookies


This recipe is straight from my daughter and these cookies are downright delicious, so I had to share them with you all.
Ingredients:
1 and 1/2 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1 and 1/2 teaspoon vanilla extract
1/2 cup vegan, non-dairy butter
1/4 cup white sugar
3/4 cup light brown sugar
1 cup creamy peanut butter
`2 cups non-dairy chocolate chips
Instructions:
Preheat oven to 350 degrees (F)
In a small bowl, combine flour, baking soda, baking powder and salt and then set aside
Cream together brown sugar, white sugar and melted non-dairy butter until smooth.
Add in 1 egg and vanilla extract and stir until smooth.
Add in peanut butter and stir until smooth.
Incorporate flour mixture 1/2 cup at a time, until the batter is easy to manipulate, but no longer runny.
With a flat handled spatula or large wooden spoon incorporate chocolate chips throughout the dough.
Spoon dough into 1 inch balls on a baking sheet. Bake at 350 for 10 to 11 minutes.
Allow to cool and set for 5 minutes.
