Ingredients
- 3/4 cup non dairy plant based butter
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 2 teaspoons pure vanilla extract
- 2 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1/2 teaspoon sea salt
- 2 cups non-dairy chocolate chips dark chocolate or semi-sweet
- 2 tablespoons non dairy milk of choice
Instructions
- Preheat oven to 350 degrees F.
- In a medium bowl mix flour, baking soda, baking powder and salt. Set aside.
- Cream together butter and sugars until combined. You can do this by hand, or with a hand mixer.
- Beat in eggs, vanilla and non dairy milk until light (about 1 minute).
- Mix in 1 cup of dry ingredients at a time, until combined, and then repeat, until all of the flour mixture is combined.
- Add chocolate chips and mix well.
- Roll 2-3 Tablespoons (depending on how large you like your cookies) of dough at a time into balls and place them evenly spaced on your prepared cookie sheets.
- Bake in preheated oven for 10 minutes. Take them out when they are just barely starting to turn brown. They may not look done, but will finish setting while they cool.
- Let them sit on the baking pan for 5 minutes before removing to cooling rack.
Notes
- My Go-to Non-Dairy milks for cooking:
- Oat milk is creamier and thicker than others which is generally better for cooking purposes. Oat milk has some different varieties, such as Extra Creamy and Vanilla.
- Coconut milk adds a sweetness to many recipes.
- Almond milk is also a good option for cookie recipes
- My go-to non-dairy chocolate chip brand is called Bake Believe. The brand has semi-sweet and dark chocolate flavors, and is keto-friendly, dairy-free, gluten-free, peanut and nut free and more.
- However, there is a milk-chocolate flavor which is not dairy free but might be good for those looking for other things like gluten free.
